I may be blogging alone these days.....but..

Hooray!
I finally made a good muffin! I made it with my Bob's Red Mill gluten free all purpose baking flour. I added 2 eggs, flaxseed meal (to substitute for xantham gum), baking powder, bananas, apricot jam, and local honey. Really tasty.....for a change!

  2. Cool! Why did you substitute for the xantham gum? Is there something bad about it or did you just want the omega 3's from the flaxseed?

    I made a successful soup a couple days ago that wasn't really that creative, but it has opened up big nutritional opportunities for me. I took a picture, so I will have to post about it soon. And I'm also hoping to try something new with my cookies tomorrow. Haha, it will involve chia, of course!

  3. I substituted for the xantham gum because apparently it is supposed to hold things together.

    Did you ever make the cookies? Maybe you should make them for your weekly meetings up there.

    No, it's ok. I totally wrote that to gain sympathy. It worked. lol

    As far as a recipe to share. It was a basic muffin recipe that I got off of Bob's red Mill website. I keep trying to switch things around to gain flavor. ...a work in progress
